The bright golden-yellow colour of the sweetcorn, drizzled with extra virgin olive oil and sprinkled with Paprika, one of my all time favourite spices to use on just about anything! Did you know that it’s made by grinding bell peppers and chilli peppers together?  The Paprika adds a sweet, smokey flavour, and contains many vitamins and minerals.  The Turmeric gives a little kick and a slight curry note.  Turmeric has powerful anti-inflammatory effects and is a very strong antioxidant.

All in all, these Charred Paprika Turmeric Corn Cobs couldn’t be better for you, or a more lovely dish to add to your lunch or dinner table! 

They only take about 14 minutes from prep to table, which is pretty doable even if you’re pushed for time.  And charring them this way locks in all that amazing, sweetcorn flavour without them becoming watery.  Also, who doesn’t love a little charred goodness on their food??!!  I LOVE it.

Ingredients
  • 4 Sweetcorn cobs sliced in half
  • Olive oil
  • Salt & pepper
  • Ground paprika
  • Ground turmeric
Instructions
  1. Place the sweetcorn in a large frying pan on a high heat, and allow the sweetcorn to char all the way around, turning every 3 - 4 minutes until the sweetcorn is tender and charred to your liking.
  2. Brush with olive oil, sprinkle with salt & pepper, paprika and turmeric to taste. Roll the sweetcorn around to make sure it is evenly seasoned all over, and serve!
