Oven Baked Healthy Vegan Falafel

These easy to make healthy baked vegan falafel balls or patties are baked and not fried, they are wonderfully herby and perfectly curry flavoured. Lovely in pita breads, wraps, buns or served on top of a green salad with a healthy sauce.

Ingredients
  • 2 x 410g tin chickpeas drained and rinsed
  • 4 tbsp plain flour
  • 2 tsp baking powder
  • 2 tsp cumin
  • 1 tsp paprika
  • 1/2 - 1 tsp cayenne pepper
  • Salt and pepper to taste
  • Large handful fresh parsley leaves
  • Large handful fresh dill leaves
  • 4 spring onions sliced
  • 1 tbsp olive oil + extra for brushing
Instructions
  1. Preheat oven to 180°C. Line a baking sheet with parchment paper.
  2. Pulse all the ingredients together in a blender until the mixture can be formed into balls with your hands. It should be fairly smooth - don’t let the mixture get too mushy or it won’t hold its shape.
  3. Form the mixture into balls about 1 inch in diameter, brush each ball with a little olive oil and place on the lined baking sheet in rows.
  4. Bake in the oven for 20 minutes or until the falafel balls are golden.
  5. Serve on salad, in wraps, pita breads, sandwiches, lettuce wraps or shape into patties and serve in bread rolls.
Recipe Notes

A little olive oil helps them to go golden, but you can skip the oil if you prefer.
