Ingredients
  • 2 tbsp olive oil
  • 2 onions finely chopped
  • 4 cloves garlic minced
  • 1 green pepper finely chopped
  • 250 g button mushrooms finely chopped
  • 1 400 g tin chopped tomato
  • 6 tbsp tomato puree
  • 1 small handful fresh basil roughly chopped
  • 1 1/2 cups black lentils
  • 3 1/2 cups water
  • Salt & pepper to taste
Instructions
  1. Heat the olive oil in a large saucepan and fry the onions and garlic until glassy and fragrant. Add the green pepper and mushrooms and fry for about 3 minutes, stirring often.
  2. Pour in the chopped tomato and tomato paste along with the fresh basil and stir in. Then stir in the lentils and water, bring to the boil then turn the heat down to medium low so that the ragout simmers for about 30 minutes until the lentils are tender and the sauce is quite thick.
  3. Season with salt and pepper to taste and serve with polenta, bread or even on its own!
