Healthy dark chocolate truffles that are easy to make and have a wonderful, decadent chocolate flavour. Packed with nut protein, vitamins, minerals and healthy fats, these truffles are perfect for your next special occasion, or just anytime!

Ingredients
  • 1 cup cocoa powder
  • 1/2 cup melted coconut oil
  • 1/2 cup raw cashews
  • P of S
  • 1/4 cup honey
  • 1/2 tsp vanilla essence
  • 1/4 tsp almond essence
  • 1/2 tsp cinnamon
Instructions
  1. Whizz up the cashews in a food processor until fine.
  2. Place the cashews in a bowl and add the coconut oil, pinch of salt, honey, vanilla essence, almond essence and cinnamon mixing well with a metal spoon. Now add the cocoa and stir in until combined. The mixture will be nice and thick.
  3. Place in the freezer for 20 mins.
  4. Take about 1 heaped tsp of the mixture and roll into a small ball with your hands. Do this with all of the mixture.
  5. Then roll each ball in shredded coconut, whizzed almonds, cranberries or cocoa powder.
  6. Store in the fridge until you are ready to eat them.

Alter the honey quantity to suit your palate.
