Zingy Avocado Citrus Couscous Salad

A light couscous salad made with wonderful fresh ingredients, delightful summer flavours and a citrus dressing to top it off. Goes perfectly with chicken, fish or tofu, or simply as it is for a light meal.

Ingredients
  • FOR THE SALAD:
  • 1 cup couscous cooked (I like wholewheat)
  • Drizzle olive oil
  • Salt and pepper to taste
  • 2 avocados sliced into cubes
  • 2 oranges peeled and sliced into rounds
  • 1 apple thinly sliced
  • 2 tsp sesame seeds
  • Few fresh parsley leaves chopped
  • FOR THE DRESSING:
  • Juice of 1 orange
  • Juice of 1/2 lemon
  • 2 tbsp olive oil
  • Salt and pepper to taste
Instructions
  1. Once the couscous is cooked, stir in a drizzle of olive oil and salt and pepper to taste.
  2. Pile the couscous into a salad bowl, then layer on the avocado, orange and apple, sprinkle over the sesame seeds and parsley.
  3. Mix together all the dressing ingredients in a small bowl and pour into a small jug or jar to serve alongside the salad.
