Takes just 5 minutes to whizz up in a blender and is completely delicious eaten a number of different ways!

Ingredients
  • 1 400g tin whole peeled tomatoes
  • 10 cherry tomatoes fresh, sliced into quarters
  • 3 tbsp tomato paste
  • 1/2 lemon juiced (2 1/2 tablespoons)
  • 1/2 white onion cut into chunks
  • 1/2 large green pepper cut into chunks
  • Big handful fresh parsley or cilantro
  • 2 small cloves of garlic
  • 1/4 tsp cayenne pepper add more if you like it really spicy
  • 1 1/2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp mixed herbs
  • 1 tsp sea salt
  • 1/2 tsp ground black pepper
  • 2 teaspoons honey
Instructions
  1. Place all ingredients in a blender or food processor and pulse until you are happy with the consistency.
Recipe Notes

If you like really spicy salsa, substitute the green pepper for green chillies, and add extra cayenne pepper to taste. Serve this salsa straight away or store in a sealed container in the fridge for up to 3 days.
