Banana Pecan & Cinnamon Muffins

Ingredients
  • 4 large very ripe bananas
  • 1/3 cup butter
  • 1 tbsp honey
  • 2 eggs beaten
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla essence
  • pinch of salt
  • 1 1/2 cups flour
  • 3/4 cup pecan nuts
Instructions
  1. Set oven to 180°C and grease a muffin tin.
  2. Mash bananas in a large bowl with a fork until fairly smooth.
  3. Melt butter and add to the bananas, stirring in with a metal spoon. Then stir in honey, lightly beaten eggs, baking soda, cinnamon, vanilla essence and salt.
  4. Add flour and fold in.
  5. Chop the pecan nuts into little pieces, keeping aside 12 whole pecans to put on top of the muffins with a sprinkle of cinnamon.
  6. Bake for about 35 minutes. Let muffins cool before you turn them out.
