1packet Marie Biscuits crushed into roughly 1cm pieces
1tbspsyrup
1tspvanilla essence
100gbutter
1cupdried apricots
1cupdried cranberries
1tspcinnamon
1/2tspmixed spice
1/4tspnutmeg
1/4tspginger
2eggs
dash of orange juice
Instructions
Melt butter and sugar in a large pan, chop up apricots and add with the cranberries and spices to the butter, boil for 3 minutes.
Remove from heat and add vanilla essence.
Stir in crushed Marie biscuits. Now add the lightly beaten eggs and the dash of orange juice and cook again for 2 minutes, stirring until the mixture thickens and starts to stick together.
Press the mixture into a baking tray, cover and leave to set in the fridge for about 3 hours.
Cut into squares or oblongs. Store in an airtight container in the fridge.
