A healthy, smooth and creamy, dairy free, vegan pumpkin smoothie bowl with all the delicious flavours of pumpkin pie! Kids and adults will love this for breakfast!

Ingredients
  • 2 cups fresh pumpkin or 2 cups pumpkin puree
  • 1 banana sliced
  • 1 green apple peeled and chopped
  • 2 tbsp peanut butter salt and sugar free
  • 3/4 cup coconut milk or a dairy free milk of your choice (almond milk, rice milk)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp mixed spice
  • 1/2 tsp vanilla essence
Instructions
  1. Peel and slice the pumpkin into small cubes. Steam until very soft, drain.

  2. Place all ingredients in a blender and blend until silky smooth and creamy. Add a dash of water if you feel it is too thick.

  3. Pour into two bowls, top with sliced fruit, nuts and seeds of your choice, dust with a little ground cinnamon and enjoy!

Recipe Notes

This smoothie bowl is delicious topped with fresh fruit of any kind, seeds and nuts - I especially like chopped almonds, pecans or macadamia nuts.
