A refreshing and tasty Mango Salad that's Easy to prepare, vegan, raw, low carb and packed full of healthy goodness! Can be made a few hours ahead of time.
TO MAKE THE DRESSING:
In a small jar, mix together the olive oil, lemon juice, cumin and fresh coriander. Allow to sit while you make the salad.
TO MAKE THE SALAD:
Gently toss all ingredients together with as much of the dressing as you like in a medium sized bowl.
Arrange the salad in a pretty bowl or on a salad platter and serve.
This salad is delicious with honey mustard chicken, lemon and herb chicken or fish fillets. Best enjoyed in the summertime when mangoes are in season!
