A savoury sweet combo that serves just as well on a festive table as it does in a packed lunch! Full of detoxifying ingredients packed with fibre and essential nutrients, tossed in a tasty yoghurt and olive oil dressing.
TO MAKE SALAD:
Place broccoli in a large bowl and cover with boiling water, place a kitchen towel over bowl and set aside for 5 minutes. Drain broccoli and run under cold water to stop cooking.
In another bowl, place all chopped ingredients together, add broccoli and cranberries and toss. Spoon over dressing and toss until evenly coated. Pile salad into a salad bowl or platter and serve.
TO MAKE DRESSING:
In a medium bowl or jug mix together all ingredients until well combined. Adjust honey and seasoning to taste.
