Easy Chocolate Coconut Cashew Bites

Just 10 minutes between you and melt in your mouth dark chocolate with oodles of coconut, crunchy nuts and sweet dried fruit. Healthy and nutritious - such little gems!

Ingredients
  • 4 tbsp butter, or ghee , organic
  • 4 tbsp coconut oil , raw and organic
  • 1 1/2 tbsp raw cacao powder
  • 2 1/2 tbsp nut butter of choice
  • 2 1/2 tbsp coconut sugar
  • Pinch Himalayan pink salt
  • 1/2 cup desiccated coconut , unsweetened
  • 1 cup dried fruit , I use mixed raisins, but anything will work!
  • 1/3 cup raw cashews , whole or chopped
  • 1/3 cup raw almonds , whole or chopped
Instructions
  1. Melt butter, coconut oil, cacao, nut butter and coconut sugar together in a medium saucepan. Stir in salt, desiccated coconut, dried fruit, cashews and almonds.

  2. Divide mixture evenly between 12 standard muffin cups (a silicone, pliable muffin pan works like a dream to pop these little guys out once frozen).

  3. Freeze for 15 minutes, or refrigerate for 40 minutes until solid. Pop chocolate bites out and enjoy! Store in an airtight container in the fridge or freezer.

Recipe Notes

You can use any dried fruit and nuts for this recipe, play around with it until you find your favourite combo! (I would recommend chopping fruit like pears or apricots into small pieces)

I have made these in a metal muffin pan, you'll need to use a butter knife to loosen the sides - it works, but your chocolate bites won’t look as pretty.
