Ingredients
FOR THE SALAD:
2 1/2cupsspiraled or grated fresh beetroot
2cupsbaby salad spinach
1cupsliced red cabbage
1cupspiraled or grated carrot
3medium radishes chopped
1/2cupsliced celery
1cupalmonds
1/2cupsunflower seeds
1/2cupcoconut shavings
FOR THE HONEY MUSTARD DRESSING:
3tbspolive oil
1tspapple cider vinegar
3tsphoney
1tsplemon juice
1tspwholegrain mustard
Salt & pepper
Instructions
Wash all fresh produce well. Slice, spiral or grate all produce and place in a large salad bowl with the almonds, sunflower seeds and coconut shavings.
Place all dressing ingredients in a small bowl and mix well until it comes together.
