My absolute favourite salad to date!
I’ve always been a salad-y person. I love a good salad. But I enjoy them more when they’re prepared for me and all I have to do is eat them! Am I alone here? Sometimes it just feels like a real mission to get all the veggies out and chop them up just for a little itty bitty salad for one or two people for lunch.
Which is why I decided to make a HUGE Beetroot Detox Salad so that you can keep it in the fridge for a couple of days and nibble on it whenever the mood strikes. OR – it’s perfect for a larger gathering as it serves 8 people as a side salad. Another salad that is really delicious and gorgeous looking is my Pecan Cranberry & Avocado Salad with Orange Dressing, as well as my Roasted Butternut Cous Cous Salad with Pesto Dressing give these a try too!
In celebration of January and us all wanting to be healthy and get rid of the post holiday blues…this is a detox salad. It’s really great for you, full of super foods and it packs a real energy punch to get you through the second half of the day.
This is by far my absolute favourite salad that I have ever made to date!! Quite the statement, I know. But it really is very delicious. The variety of flavours and colours go together so well, and the way it is prepared with everything spiralled and cut up fairly small, you get all the flavours in every mouthful which is just the best! Yum yum….give me more of this salad any day!
I particularly love the Honey Mustard Dressing that I made to go with this Beetroot Detox Salad. It’s not overwhelming at all, but adds a hint of honey, mustard and a touch of lemon and olive oil to each bite which is just enough to bring all the flavours together for salad perfection on a plate.
I will eat this salad for lunch as a main dish, it would be fabulous to take to work, and I would love to share it with family and friends as a side dish – it will go with just about anything!
Will you give this Detox Salad a try? Please comment and let me know what you think of it if you do make it, I hope you love it like I do!!
