I know it’s winter for many of you, and I hate to brag, but S-U-M-M-E-R is here!!  Warm balmy days, evening beach walks, flip flops and summer menus are being enjoyed on this side of the globe.  The real heat and humidity have not hit yet, so I’m taking every opportunity to enjoy this perfect weather while it lasts! 

I have also been enjoying summer FOOD!  Of course…  Because food is always somewhere at the top of the list in my world.  I’m loving all the summer fruit that is available right now – this week I bought pineapples, mangoes, kiwis, nectarines, peaches, and dragon fruit!! (a new one for me – I’m so excited to try it!)

Right NOW though – Let’s talk about my Refreshing Coconut Pineapple Mango Smoothie.  For starters let me just tell you how easy this is….It takes just 10 minutes to prepare, and that’s including the time to peel and slice the pineapple and mango, so if you do this the night before and store your fruit in the fridge overnight, in the morning (or at snack time) this smoothie would take a couple of minutes to whizz up. 

This Pineapple Mango Smoothie is SOOOOO refreshing!!!  The pineapple gives it that zing that is just so light and summery, and the mango adds yummy sweetness while the coconut milk thins it out to drinking consistency and brings a very gentle coconut flavour to the smoothie.  As you can see, this is dairy free so those who like to stay away from milk and yoghurt – this is the smoothie for you!

Ingredients
  • 1 mango pealed and sliced into cubes
  • 1/2 pineapple pealed and sliced into cubes
  • 165 ml coconut milk 1 cup
Instructions
  1. Place all ingredients in a blender and blend until smooth.
  2. Pour into two tall glasses and enjoy.
