This is a salad that screams Christmas to me….The colours of the salad leaves, orange segments, cranberries and avocado are so happy and bright – they’re all about summer and there’s that red and green combo that always reminds us of Christmas time. 

Speaking of Christmas time, there’s a real festive buzz around here this week.  It’s my first Christmas in Ballito and for the last few months everyone has been warning me how our little town would get taken over by tourists at Christmas time – I was getting a little worried to be honest! 

But actually, I’m liking it.  It makes me feel as though I should drop everything and be on holiday too.  And after Friday I will be, so totally looking forward to that!!  Next week will be all about beach walks, reading books and general relaxation.

Until then though – back to this delicious salad.  It’s a really refreshing, light side dish which is perfect for our sunny weather this time of year, and with Christmas a mere 3 days away – I thought this would be the perfect salad to serve this Christmas day. 

I know a lot of people still lean towards the traditional Christmas feast – Christmas ham, roast turkey or chicken, perhaps a good old cauliflower cheese and some dinner rolls (check out my light & fluffy dinner rolls 2 ways)…This Pecan Cranberry & Avocado Salad with Orange Dressing would be the perfect side dish to compliment your meal – It’s light and fresh and it rounds out any meal perfectly.

Pecan Cranberry & Avocado Salad with Orange Dressing

Ingredients
  • FOR THE SALAD:
  • 10 leaves purple frilly lettuce
  • 1 baby gem lettuce head
  • 1/2 a medium cucumber
  • 2 oranges
  • 1/2 a granny smith apple
  • 1/2 a medium avocado
  • 1 handful cranberries
  • 1 handful pecan nuts
  • FOR THE DRESSING:
  • juice of 1/2 a lemon
  • juice of 1 orange
  • 1/2 tbsp apple cider vinegar
  • 2 tbsp olive oil
  • 2 tsp honey
  • Salt & pepper
Instructions
  1. TO MAKE THE SALAD:
  2. Wash the lettuce leaves well then arrange on a large platter around a small bowl (for the dressing).
  3. Slice the cucumber into small pieces, slice the oranges into segments and slice the apple and avocado into thin half moon slices.
  4. Place them all on top of the lettuce leaves then scatter over the cranberries and pecans.
  5. TO MAKE THE DRESSING:
  6. Mix all ingredients together and pour into the small bowl in the centre of the salad.
