I’ve always loved olive paste & fresh herby bread as an appetiser but I had never tried to make it myself & I didn’t realise how easy it was to make.  Until now… 

You can whip this up at a moments notice, no long preparation here…It took me a grand total of 10 minutes to throw the ingredients into a blender, whizz it up, pop it into a cute little bowl and Bob’s your uncle – it’s ready to serve.

This is a delicious appetiser that you can serve with fresh bread, melba toast or crackers.  It is especially yummy paired with cream cheese.

I like to serve this olive paste alongside a plate of healthy snacks like carrots, cucumber & celery with an avocado dip.  It’s perfect for this time of year if you have guests coming over and you need a quick & easy, delicious combo to serve up.  Your guests will love it!

Ingredients
  • 400 g black Kalamata olives in brine
  • 4 tsp fresh thyme + extra for garnish
  • 1/2 tbsp balsamic vinegar
  • 1 tbsp olive oil
Instructions
  1. Place ingredients in a blender and pulse until smooth.
  2. Serve with bread, melba toast or crackers.
Recipe Notes

If you find the paste is too thick just add a little more olive oil & blend - until you are happy with it.
