5 ingredient, perfectly sweet and tender Flourless Banana Flapjacks that go crispy on the edges - YUM - are delicious topped with your favourite nut butter and any fresh fruit you like. They’re macronutrient rich, TASTE AMAZING and are wonderfully healthy!
In a medium bowl mash the bananas, stir in the eggs and yoghurt until well combined. Now stir in the baking powder, vanilla extract and salt.
Heat 1 tsp coconut oil in a large, non-stick frying pan over medium-high heat. Spoon 2 tbsp of batter per flapjack into the pan (2 or 3 at a time) and cook for 2 minutes on each side or until golden brown. Repeat until batter is finished.
Serve warm with a dollop of nut butter on top and any fresh fruit or berries you like, a little coconut milk or a spoon of yoghurt, a dash of cinnamon and a drizzle of raw honey. SO DELICIOUS! Enjoy.
