Here’s how to make Flourless Banana Flapjacks:

  • Mash the bananas
  • Stir in the eggs, yoghurt of choice, baking powder, vanilla and pink salt
  • Heat coconut oil in frying pan, and cook flapjacks for 2 minutes on each side. You can cook 2- 3 flapjacks at once to save time. Of course, if you have a larger pan or skillet, you can cook more in each batch
  • The trick is to keep the flapjacks fairly small so that they are easily flippable

If you missed the breakfast boat, try them tomorrow for a delicious and fun early breakfast or brunch.

We love to top ours with a few slices of banana, some fresh berries, a dollop of nut butter, a drizzle of honey, a sprinkle of cinnamon, and a spoon of extra thick yoghurt.

You can make this recipe diary free by swapping out the Greek yoghurt for coconut yoghurt, or an alternative dairy free yoghurt of your choice.

I’ve also drizzled the finished flapjacks with coconut milk before and that goes down a treat too!

How to store leftover flapjacks:

It’s highly unlikely that you’ll have any leftovers, but perhaps if you’re making these for one, which is a great idea and one I subscribe to myself every now and then – then you can store the leftover flapjacks in an airtight container in the fridge for up to 5 days.

Ingredients
  • 2 large bananas
  • 2 eggs
  • 1/2 cup plain yoghurt , or coconut yoghurt
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch Himalayan pink salt
  • Coconut oil , for cooking
Instructions
  1. In a medium bowl mash the bananas, stir in the eggs and yoghurt until well combined. Now stir in the baking powder, vanilla extract and salt.

  2. Heat 1 tsp coconut oil in a large, non-stick frying pan over medium-high heat. Spoon 2 tbsp of batter per flapjack into the pan (2 or 3 at a time) and cook for 2 minutes on each side or until golden brown. Repeat until batter is finished.

  3. Serve warm with a dollop of nut butter on top and any fresh fruit or berries you like, a little coconut milk or a spoon of yoghurt, a dash of cinnamon and a drizzle of raw honey. SO DELICIOUS! Enjoy.

Recipe Notes

The trick with these flapjacks is to keep them small so that they’re easy to flip without breaking!
