Stewed apples have become a real staple in my life recently. I’m not a huge fan of raw apples, I can’t say why exactly, but give me the choice of a raw apple and just about any other fruit and I’ll choose the other fruit. Every time. But I love apples in desserts and so I started stewing them to have with my breakfast which takes 8 minutes flat. And I love them this way!
Which inspired me to make these Apple Pie Breakfast Oats, and now I can’t stop eating them!! I literally go to bed looking forward to my breakfast the next morning, and I wake up excited to feast on my breakfast oats.
I’m always excited about food so this is nothing new for me, but being excited about apples (that aren’t in a pudding)…is a first!
I really encourage you to try out this 10 minute Apple Pie Breakfast Oatmeal recipe even if you’re not a huge apple fan like me, you will LOVE this oatmeal!!
As always, if you have any questions or comments, I’d love to hear from you.
- 2 large apples I used pink lady
- 2 cups water divided
- 1 cup rolled oats
- 1 tsp vanilla essence
- 1 tsp ground cinnamon
Peel and chop the apples into 5mm cubes. Place them in a small saucepan with 1/2 cup of water and boil for 8 minutes on a medium high heat until the apples are tender and almost all the water has evaporated.
While the apples are cooking, place the oats and 1 1/2 cups water in a large microwave proof bowl and cook on high for 2 minutes. The oats should bubble right up towards the end of the cooking time and be light and fluffy.
Stir in the vanilla essence, cinnamon then the apples and spoon into two bowls. Serve straight away, or store in an airtight container or jar overnight and heat up in the microwave in the morning.
