As the weather has warmed up here I’ve found that my morning ritual of cooked oats with fresh fruit has become a bit heavy, or maybe just too warm to have for breakfast when the weather is so hot and humid.  I’ve been looking for alternatives and I have definitely found some great ones….

I’m so thrilled to be sharing this healthy granola recipe with you today.  I haven’t eaten cereal for years!  Seriously.  Store bought cereals are so full of things we don’t want to be putting in our bodies, not to mention all the sugar – it really isn’t the greatest way to start off our day.

I really DO like granola.  I have memories of eating it as a kid and just loving its crunchy nutty flavour so much.  I knew there had to be a way to make a super healthy version that tastes just as great.  I think I developed a winner recipe today!

It’s very simple, just rolled oats, bran, spices, honey, coconut oil, nuts, sunflower seeds and dried fruit.  I used almonds and cashews with dried apricots.  I really love this combination and I think the flavours are TOTALLY DELISH but you can play around with different combos and add your favourite nuts and dried fruits, you can’t really go wrong.

This is obviously a great breakfast recipe to have with milk, yoghurt, fresh fruit etc.  But it’s great to pack for lunch and eat dry too, or as an afternoon snack.  Really yummy, and such a healthy alternative!!

Honey Bran Granola with Almonds & Apricots

Ingredients
  • 4 cups raw rolled oats
  • 2 cups wheat bran
  • 2 tsp cinnamon
  • 1 tsp mixed spice
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 2 tbsp honey
  • 3/4 cup coconut oil
  • 1/2 tsp course sea salt
  • 3/4 cup almonds
  • 3/4 cup cashews
  • 1/4 cup sunflower seeds
  • 1 cup dried apricots
Instructions
  1. Set oven to 150°C.
  2. Place the oats, bran, spices, honey and coconut oil in a large bowl and mix well. Pour onto a baking tray and spread out evenly. Sprinkle salt over the granola and bake for about 15 minutes in the middle of the oven, then turn the granola with a wooden spoon and bake for another 10 minutes, turn again and bake for a further 10 minutes until medium golden brown all the way through.
  3. Now stir the whole nuts and sunflower seeds through the granola, bake for a further 20 minutes turning after 10 minutes to toast the nuts and seeds a little bit.
  4. Once the granola is cooked and nicely browned stir through the roughly chopped apricots and set aside to cool.
  5. Store in an airtight container in a cool place.
Recipe Notes

If you want to make a big batch just double the recipe and bake the granola in two baking trays either at the same time alternating the trays between the middle and bottom shelf or one after the other.
