Ingredients
  • FOR THE SALAD:
  • 6-7 large kale leaves
  • 3 green apples
  • 1/2 cup flaked almonds
  • 1/4 cup dried cranberries
  • FOR THE DRESSING:
  • 3/4 cup coconut milk
  • 3 tbsp olive oil
  • 4 tbsp sesame oil
  • 2-3 tsp honey
  • salt and pepper to taste
Instructions
  1. HOW TO MAKE THE SALAD:

  2. Slice the kale leaves from the stalks (you don’t want any part of the stalk) and chop the kale into small pieces. Slice the apples into thin half-slices.

  3. Toss the kale, apples, almonds and cranberries together in a salad bowl.

  4. HOW TO MAKE THE DRESSING:

  5. Mix all ingredients together in a small bowl, drizzle over the salad and gently toss until everything is coated with the dressing. Serve and enjoy! 

Recipe Notes

You can add goat cheese, feta or brie for some extra flavour and decadence if you're not worried about the vegan aspect.  Cheese goes amazingly well with kale, apple and cranberries!
