(This is a much quicker and easier version to prep which is great for any night of the week. When I have more time I like to make our family lasagne recipe which isn’t quick, but it is delicious and I’ll share that recipe with you soon!)

Easy Beef Lasagne

This recipe serves 6 to 8 people.

Ingredients

  • 1 pound (500g) lean ground beef
  • 4 cups of your favourite pasta sauce (tomato and basil works well), or canned diced tomato
  • 6 uncooked, gluten-free lasagne sheets (oven-ready)
  • 1 container ricotta cheese (15 ounces /425g)
  • 2 ½ cups shredded mozzarella cheese (cheddar works well too)
  • ¼ cup hot water

Method

  1. Brown the beef over medium heat until cooked through. Crumble with a spoon as you go, and drain off any excess grease. Stir in pasta sauce
  2. Preheat oven to 375° F (190°C)
  3. Put one-third of the sauce into a greased baking dish (11 x 7 inches works well). Place one layer of lasagna noodles on top, followed by half of the ricotta and half of the mozzarella.
  4. Repeat the layers, topping with the remaining third of the meat sauce. Pour 1/4 cup of hot water gently around the baking dish’s inside edges (this helps cook the pasta)
  5. Cover your dish tightly with 2 layers of heavy-duty foil. Bake for 45 minutes, then remove the foil and bake for a further 10 minutes until cheese is golden and bubbling
  6. Allow to stand for 10 minutes before serving with a simple side salad and ENJOY all the flavours!

Dairy-Free Lasagne

This recipe resembles a lasagne soup and serves 6 people. Perfect for dipping your favourite gluten-free bread, nom nom nom!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound (500g) ground beef
  • 1 pound (500g) ground Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 large jar / can (18 ounces / 510g)) chopped tomatoes with juice
  • 2 1/2 cups pasta sauce (style marinara)
  • 3 1/2 cups broth (chicken or beef)
  • 2 teaspoons dried Italian seasoning
  • 1/2 teaspoon salt
  • 1 box gluten-free lasagne sheets
  • Dairy-free Ricotta cheese (for serving)
  • Fresh flat-leaf parsley, chopped (for serving)

Method

  1. Heat oil in a large saucepan (medium-high heat) and brown the onion, garlic, ground beef, and ground sausage. Stir while cooking – about 7 minutes, or till the meat is mostly cooked and the onions are soft. Drain any extra grease if needed.
  2. Pour in the marinara sauce, chopped tomatoes with juice, beef or chicken broth, Italian seasoning, and salt. Stir well, bring the tomato sauce to a boil, then cover, reduce the heat to medium-low, and let simmer for a few minutes.
  3. To precook the lasagne sheets, cook them for 5 to 6 minutes in a large pot of boiling, salted water. The noodles should be soft enough to cut but still too hard to be al dente.
  4. Drain the lasagne sheets and cut them into bite-sized pieces. Add the pieces to the pasta sauce and cook for another 5 or 10 minutes. Stir occasionally, checking the pasta. Once they are cooked to your taste, serve topped with scoops of dairy-free Ricotta cheese and fresh parsley.

Easy Veggie Lasagne

This recipe serves 8 people.

Ingredients

  • 2 teaspoons olive oil
  • 2 1/2 cups (8 ounces /225g) sliced mushrooms
  • 1 zucchini, diced
  • 1 sweet bell pepper (any colour), seeded and diced
  • 1 medium onion, diced
  • 1 large garlic clove, minced
  • 1 egg, beaten
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 15 ounces (425g) Ricotta cheese
  • 2 ¼ cups grated mozzarella cheese, divided (or cheddar cheese)
  • ½ cup grated Parmesan cheese, divided
  • 1 large jar (24 ounces, or 2 ½ cups) marinara sauce
  • 9 gluten-free lasagne sheets (oven-ready)
  1. Preheat oven to 400° F (204°C).
  2. Grease a baking dish (9 x 13 inches works well) and set aside.
  3. Heat oil in a large skillet (medium-high heat) and sauté the vegetables (mushrooms, zucchini, sweet pepper, onion, and garlic). Cook for about 3 minutes or till tender.
  4. Mix in a separate bowl the egg, parsley, basil, Ricotta cheese, half the mozzarella, and half the Parmesan cheese.
  5. Add the marinara sauce to the veggies and spread one-quarter of the sauce on the bottom of your baking dish. Top the sauce with a layer of lasagne sheets, 1/3 of the cheese and herb mixture, and another quarter of the sauce.
  6. Repeat these layers two more times. Finish off with the other half of the mozzarella, then sprinkle the other half of the Parmesan cheese on top. Cover with heavy-duty foil.
  7. Bake for 35 minutes. Remove the foil and bake for another 10 minutes to brown the cheese. Let stand for 10 minutes before serving.
