I had so much fun shopping yesterday for fresh produce…Just set me loose in the fruit & veg section and I’m like a kid in a candy store!!  I knew exactly what I wanted and I stuck to the list…extra brownie points for me! 

I’m SO excited to share this awesome salad with you today, if you’re anything like me you’re already salivating just looking at the pictures of this Harvest Salad.  What an amazing light lunch, or side dish (if you have men around it will probably be a side dish!). For me though, this is a perfect, wholesome meal with all the right flavours.  You will feel so great after eating this salad, you’ll be making it weekly!

This salad is made with red grapes, baby spinach, zucchinis, strawberries, radishes, sunflower seeds and pumpkin seeds and has a delicious dressing made with chives, olive oil, balsamic vinegar, lemon juice and honey.  The combination of all these flavours is to DIE for!!!

If you’re looking for Easter side dish ideas this is a real winner!  It’s so very quick & easy to throw together and who wouldn’t love this Grape Spinach Zucchini Harvest Salad??!!?  The weather is still pretty warm here, so a cold side dish option will really go down well.

While I was in the fruit section yesterday, busy deciding on plums or pears for my upcoming *Easter Trifle*!! (stay tuned for that coming soon!!), a sweet lady spotted some fresh asparagus in my trolly and asked me how I cooked my asparagus…So I told her I like to roast it with a drizzle of olive oil and a little salt & pepper.  She was thrilled with this simple idea and she said she would try it out!  That was a fun encounter, I was very tempted to tell her I have a food blog….so if you’re out there nice grocery store lady….come check out my blog!!!

Ingredients
  • FOR THE SALAD:
  • 150 g 3 cups baby spinach
  • 5 2 cups zucchinis sliced into match sticks
  • 250 g 2 cups red grapes sliced in half
  • 250 g 2 cups strawberries sliced in half
  • 2 radishes roughly chopped
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • FOR THE DRESSING:
  • Small handful chives finely chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • Salt & pepper to taste
Instructions
  1. Place all salad ingredients in a large mixing bowl and toss.
  2. Pour over the dressing and toss until the salad is nicely coated. (Or serve the dressing on the side)
  3. Serve in a large salad bowl or platter and enjoy!
