My Sugar Free Flourless Peanut Butter Cookies can be frozen at cookie dough phase, just place the dough in a ziplock bag and freeze to bake another time.
Or, you can freeze the cookies after they have been baked. I would suggest defrosting them completely and then baking them for about 6 minutes to get that crispy outside, then serve warm or cool completely and store in an airtight container somewhere cool.
While these cookies are certainly healthy as far as sweet treats go, they are still considered a treat in my book, and I’ll have them in place of a less healthy cookie, and not on a daily basis.

Dairy free, Sugar Free Flourless Peanut Butter Cookies. Gloriously crunchy on the edges, soft and chewy in the middle. Sweet, delicious and SO easy to make!
(no sugar, no salt)
- 2 large eggs
, add more to taste
Himalayan pink salt
, or arrowroot flour
, coarsely chopped
Preheat oven to 180°C (350°F). Line a baking sheet with parchment paper and grease with melted coconut oil.
Place the peanut butter, eggs, honey, vanilla extract, almond extract and salt in a blender or food processor. Blend until smooth, scraping down the sides if needed.
Pulse in the arrowroot and chopped peanuts until just combined. (Don't over-blend - you want some crunchy bits!)
Use a tablespoon to scoop out the dough and place onto prepared cookie sheet in rows.
Bake for 10 minutes until lightly golden. Cool for 5 - 10 minutes on the baking sheet before transferring to a cooling rack to cool completely. Or enjoy them warm, up to you!
