I love this simple soup because it can be made with any combination of fresh or frozen veggies that you have on hand, I always think fresh is best, but at a push, a few frozen vegetables are fine.
And adding in just over a cup of my Favourite Homemade Tasty Tomato Salsa (pictured below!) means you know your soup will be perfectly spicy, with a rich tomato flavour and plenty of goodness. The salsa can be left out if you don’t have time, the soup just won’t be quiiiite as delicious and flavoursome.
I like to make a batch of my tomato salsa and use some freshly made, and freeze the rest for days when I need to whip up a quick meal. Just like this AMAZING SOUP!
Without further ado, let’s get down to the nitty gritty of what, exactly, is in this delightful veggie soup!
How to make it:
- The onion and garlic are fried until glassy, then the fresh veggies (tomato, celery, carrots and green beans) are stir fried for about 1 minute
- Tomato salsa goes in now, with the can of crushed tomato and some water
- Simmer for 20 minutes
- Toss in the courgettes now, and simmer until they are tender
- Stir in the spices, season with salt and black pepper
- And THAT IS ALL FOLKS – 35 minutes later, supper is done!
Is that easy or is that easy? I’d say on a scale of 1 – 10, it’s pretty darn easy.
If you’re having people over for a casual kitchen supper, homemade soup + homemade bread = pure comfort food perfection!
This super yummy Wonderful Homemade Vegetable Soup will last up to 3 days in an airtight container in the fridge.
