Wonderful Homemade Vegetable Soup is so basic and so TASTY, it’s simply the best.

This isn’t just a winter soup recipe.  As much as we love soup in winter, and highly encourage it!  If you’re heading into summer, this is a great weeknight dinner that is ready in no time and is so chock-a-block full of nutritious, fresh vegetables, it’s ideal for giving you a healthy boost.

Coz, let’s face it, as we get closer to the end of the year with all the festivities and fun times that lie ahead…We all need a super nutrient dense meal on occasion to pull us through!

I love this simple soup because it can be made with any combination of fresh or frozen veggies that you have on hand, I always think fresh is best, but at a push, a few frozen vegetables are fine.

And adding in just over a cup of my Favourite Homemade Tasty Tomato Salsa (pictured below!) means you know your soup will be perfectly spicy, with a rich tomato flavour and plenty of goodness.  The salsa can be left out if you don’t have time, the soup just won’t be quiiiite as delicious and flavoursome.

I like to make a batch of my tomato salsa and use some freshly made, and freeze the rest for days when I need to whip up a quick meal.  Just like this AMAZING SOUP!

Without further ado, let’s get down to the nitty gritty of what, exactly, is in this delightful veggie soup!

How to make it:
  • The onion and garlic are fried until glassy, then the fresh veggies (tomato, celery, carrots and green beans) are stir fried for about 1 minute
  • Tomato salsa goes in now, with the can of crushed tomato and some water
  • Simmer for 20 minutes
  • Toss in the courgettes now, and simmer until they are tender
  • Stir in the spices, season with salt and black pepper
  • And THAT IS ALL FOLKS – 35 minutes later, supper is done!
Is that easy or is that easy?  I’d say on a scale of 1 – 10, it’s pretty darn easy.

This super yummy Wonderful Homemade Vegetable Soup will last up to 3 days in an airtight container in the fridge.  And it can be frozen, just be sure to allow it to defrost fully before stirring it up, or the vegetables will get mushy.  On the other hand, you can always defrost the chunky soup, throw it in your blender and blitz it into a smooth vegetable soup…Your choice.

Quick and easy, this incredibly tasty vegan veggie soup can be made with any fresh or frozen produce that you have on hand, and it's extra tasty with the addition of my tomato salsa!

Ingredients
  • 2 tbsp olive oil
  • 1 brown onion finely chopped
  • 2 cloves garlic minced
  • 1 tomato sliced into small cubes
  • 3 celery stalks sliced
  • 2 large carrots peeled and chopped small
  • 1 1/2 cups green beans sliced into 1 inch pieces
  • 1 1/4 cups Favourite Tasty Tomato Salsa see notes for the link to recipe!
  • 400 g can crushed tomato
  • 2 cups water
  • 4 large courgettes sliced
  • 1 tsp turmeric
  • 3 tsp paprika
  • sea salt and ground black pepper to taste
Instructions
  1. In a large saucepan, heat the olive oil and fry the onion until glassy, then add the garlic and fry until fragrant. Add the fresh tomato, celery, carrots and green beans and stir fry for about a minute.

  2. Now pour in the Favourite Tasty Tomato Salsa and the can of crushed tomato, along with about 2 cups water. 

  3. Turn the heat down to medium and allow the soup to simmer away for about 20 minutes, or until the veggies are almost tender. At this stage, add the courgettes to the soup and simmer for another 5 minutes, or until the courgettes are cooked. 

  4. Stir in the turmeric, paprika, sea salt and ground black pepper, tweak these to taste and serve!

This soup lasts up to 3 days in an airtight container in the fridge. It freezes well, just be sure to allow it to defrost fully before stirring it up, or the vegetables will get mushy.
